The regular 2011 Vin Jaune fermented and matured in exactly the same way as the new cuvée Protéodies, and the wines were bottled the same day to minimize differences between the normal process used here and the one where they used sound frequencies on the cuvée Protéodies barrels. The Savagnin grapes come from vines planted in 1953 and 1976 on gray marl soils. At the end of July 2012, the wine was put in well-seasoned 228-liter oak barrels, where it matured under a veil of flor yeasts for almost seven years. There is a faint creaminess on the nose, which reveals finesse and elegance, somewhat closer to the nose of some biological sherries than the majority of wines from the Jura. The intensity is only medium in the palate; and I always expect power in a Vin Jaune, but this is medium-bodied and feels quite light in comparison with other Jaunes. 3,227 bottles were filled in March 2019.
