Chateau Pavie

Château Pavie is located southeast of the village of Saint-Émilion. It is one of only four estates in the region to have been awarded the title of ‘Premier Grand Cru Classé A’, the highest classification in the Saint-Émilion appellation. 

History

The name ‘Pavie’ comes from ‘Pavie peach’, a variety with red flesh that grew on these hills long before vineyards were established here in the 4th century AD. 

It all started in 1873, when the Bordeaux merchant Ferdinand Buffard inherited Domaine de la Sable and, over the following two decades, gradually acquired neighbouring plots thereby creating an estate of nearly 50 hectares, whilst continuing to vinify the grapes from these plots separately. After his death in 1912, Albert Port consolidated most of these plots to form what we know today as Château Pavie.

In 1943, Alexandre Valette bought the estate, and the Valette family owned it for over half a century. In 1998, Jean-Paul Valette sold it to Gérard and Chantal Perse, a couple from Paris who had previously worked in the food retail sector before turning their attention to the wine industry. The Perses invested intensively in the vineyards and cellars, and hired Michel Rolland to act as winemaking consultant, reducing yields from around 55 litres per hectare to 30 litres. The results were immediate: in 2012, Pavie was elevated to the status of Premier Grand Cru Classé A. Gérard Perse passed away in July 2025; the estate is currently managed by his family.

Vineyards

With a total vineyard area of 37 hectares divided into 21 plots, it is the largest of all the Premier Grand Cru Classé A estates in Saint-Émilion. Altitudes range from approximately 35 metres at the foot of the hill to 85 metres at the summit, ensuring natural drainage across the entire estate. The entire vineyard is meticulously tended by hand, with particular emphasis on green harvesting and canopy management. Average yield is maintained at 30 hectolitres per hectare.

Terroir

The estate’s soils can be divided into three distinct types. Located on the summit at an altitude of approximately 85 metres, on the banks of the Dordogne, lies a limestone plateau with a surface layer of white crumbly limestone soil and an underlying layer of star-shaped marine limestone.

At an altitude of around 55 metres in the middle section, the topsoil consists of fine-grained brown limestone, whilst the subsoil comprises Fronsade conglomerate, a heavier, clay-limestone soil. At the foot of the slope, at an altitude of approximately 35 metres, the soil transitions to alluvial limestone and sandy clay.

The south-facing aspect allows sunlight to accumulate fully throughout the growing season, whilst the slope’s natural drainage, combined with the influence of westerly winds, results in an extremely low risk of frost damage.

Grape Varieties

The vineyard is planted with approximately 60% Merlot, 30% Cabernet Franc and 10% Cabernet Sauvignon. Merlot is primarily planted on the plateau and upper slopes, whilst Cabernet Franc is better suited to the warmer, sandy soils at the foot of the slope. Six shoots are retained per vine on old vines, and two on young vines.

Winemaking Process

Harvesting is carried out manually, with sorting and selection taking place on a double-deck sorting table. Fermentation takes place in 20 temperature-controlled vats, with the wine remaining in contact with the skins for approximately three weeks, the exact duration depending on the vintage. Fermentation is done in oak barrels.

The cellars were renovated in 1998, with the interior featuring stone arches salvaged from the old Bordeaux-Bastide railway station. The wine is aged in barriques (new) for 18 to 24 months.

Wines

Chateau Pavie produces 3 wines:

- The flagship wine, ‘Château Pavie’, is classified as a Grand Cru.

- Arômes de Pavie, is the second label, crafted from selected grapes sourced from young vines and various plots.

- Esprit de Pavie, bears a broader Bordeaux appellation, using grapes from the southern slopes of the Dordogne Valley, and is designed to introduce consumers to the winemaking style of Château Perse in a more accessible manner.

All the estate’s wines are distributed exclusively through the family’s own trading company.
