Jacques Carillon

While Puligny-Montrachet is home to many famous wineries, Jacques Carillon is rarely the first place that comes to mind. Jacques and Sylvia Carillon run a small estate in the village; their vineyards consist almost entirely of Chardonnay, and every bottle is produced from grapes grown on vines tended personally by the couple. They do not purchase grapes from outside sources.

Their cultivation methods are close to organic: they use no herbicides, till the soil by hand with a plow, and prune short to control yields. According to critics, these wines are straightforward and mineral-driven rather than rich and opulent, offering a rewarding experience for those with patience. Critics who closely examine the White Burgundy rank this domaine among the very best, though they also note that it has not achieved the same level of fame as its neighboring wineries.

The history

According to records from 1520, Jehan Carillon worked as a winemaker in Puligny-Montrachet, and since then, the Carillon family has been cultivating grapevines in this village. Jacques Carillon is a descendant of that very family.

Jacques, who learned the art of winemaking in Beaune, joined the family vineyard in 1980 alongside his father, Louis. For 30 years, these wines were released under the Domaine Louis Carillon label, a name that had long been associated with the classic, restrained style of Puligny wines.

Then a split occurred. Starting with the 2010 vintage, the family-owned vineyard was divided between Jacques and François, the two sons of Louis; each inherited a portion of the vineyard and set out on their own paths. Jacques and his wife, Sylvia, have since operated their share under the name Domaine Jacques Carillon.

It is common practice for a Burgundy estate to be divided among children, which usually results in smaller shares for everyone. In this case, however, it allowed one grower to focus on a small number of Puligny-Montrachet climats.

The vineyards

Domaine Jacques Carillon cultivates approximately 5 hectares of vineyards. This is a small scale even by Côte de Beaune's standards, and the domaine clearly states that these vineyards are located in Puligny-Montrachet's excellent climats. There is also a very small parcel located in Chassagne-Montrachet, just outside the village.

The names of the vineyards speak for themselves. Among the Premiers Crus are Les Perrières, Les Champs Canet, and Les Referts, and the domaine also owns the Bienvenues-Bâtard-Montrachet vineyard, a Grand Cru. The remainder consists of Village-level Puligny.

Here, the age of the vines is crucial. By the mid-2000s, the vines at Les Referts and Bienvenues-Bâtard-Montrachet were already over 40 years old, and old vines in Puligny tend to yield less juice but exhibit a more intense character.

All work is done by hand. We do not use herbicides; instead, we plow the soil with a plow, prune the shoots aggressively in the spring, and practice green harvesting when the yield appears too high.

The grapes

This domaine is famous for its white wines, and the overwhelming majority of wines leaving the cellar in Puligny-Montrachet are Chardonnay.

  • Chardonnay, which makes up virtually the entire lineup
  • Pinot Noir, a red wine produced in small quantities alongside the white wines

Winemaking

Jacques Carillon focuses more on the vineyards than the wine cellar, and this domaine's philosophy is very clear: Respect the vines and let nature do the work. Nature sets the pace, and the grower's role is merely to assist.

It is much easier to uphold this philosophy when all the grapes used for bottling are grown in-house. Since every wine is produced from the domaine's own vineyards, key decisions, such as when to prune, when to remove shoots, and whether to thin the fruit, are made directly by the very people who will later make the wine.

Yields are kept low through short pruning and thorough shoot removal rather than post-harvest adjustments. This is a strictly applied, traditional Burgundian method.

The result is a wine with consistent characteristics: white wines with excellent concentration, pronounced mineral notes, and a structure capable of aging, one that emphasizes tension over weight. The word restrained perfectly describes this wines.

The range, from village to grand cru

Puligny-Montrachet is the backbone of this domaine. This village wine serves as the domaine's calling card and is by no means treated as a mere entry-level wine produced haphazardly.

Above it are the Premier Crus (1er cru), each produced from a specific climat and possessing its own unique character:

  • Puligny-Montrachet Les Perrieres: A robust wine with a stony flavor
  • Puligny-Montrachet Les Champs Canet 1er cru: A slightly smoother wine
  • Puligny-Montrachet Les Referts: Produced from old vines

At the very top of the pyramid sits the Grand Cru Bienvenues-Bâtard-Montrachet, produced in extremely limited quantities. Domaine Jacques Carillon also bottles the white wine Chassagne-Montrachet, the Premier Cru Les Macherelles, and a small quantity of red wine.

Overall, these wines are intended for long-term aging. When young, they may seem somewhat reserved. Although they do have fruity aromas, a robust mineral backbone dominates. The Premier Cru and Grand Cru wines truly reveal their full potential after several years of aging in the cellar. The most common mistake is drinking them too soon.
