A pale rosé champagne that has pretty notes of cherry stone and grapefruit. Some salted almond, too. It’s medium bodied with fine bubbles and a tasty, saline and lightly honeyed finish.
90% Chardonnay from Avize and Oger, and 10% Pinot Noir (bought from a friend in Verzenay) because they couldn’t get their own red fruit ripe enough. Blend of 2020 and 2021. Disgorged June 2023. Dosage 5 g/l.
Pearly pink. Melon and mango and a touch of raspberry cream. So pretty. Super-delicate bubbles – like a feather brush across your cheek. I love the touch of Sichuan peppercorn on the finish and the citrus bite of coriander seed. Much more than just pretty. Well-suited to delicate shellfish. (TC)
