62% Pinot Noir, 24% Chardonnay and 14% Pinot Meunier. 85% of the grapes come from premier cru and grand cru vineyards, 60% of which are owned by Bollinger. 5–6% of the Pinot Noir vinified as red wine. Primary fermentation in both small stainless-steel tanks and wooden casks, then aged for at least three years. A key component of this blend is the use of reserve wines in magnums and French oak barrels, which are aged for 5 to 15 years or more in the cellars. Winemaker Gilles Descotes. TA 4.1 g/l, pH 3.2, RS 9 g/l. Natural cork. Bottle weight 900 g. Available in over 283 shops.
Really complex nose. Oak in evidence but one forgives this for Bollinger! A delightfully complex wine for the table. Very long but not for those seeking maximum refreshment. (JR)
