The winery Bibi Greatz was founded in 2000 in the town of Fiesole in Tuscany. From the estate, you have a phenomenal view of the city of Florence. Bibi comes from an artist family, but for himself, he decided to choose a different path, and took up the profession of winemaking. He bought an eight-hectare vineyard with 60-year-old vines. Today, Graetz has one of the largest estates of old vineyards in Tuscany.
The old Italian traditions are a hallmark of the company. The indigenous grape varieties Sangiovese, Canaiolo and Colorino still form the core of the wine. The altitude, the poor sandy soils and the microclimate provide unique terroirs. Besides, the white wines come from the island of Giglio. On this island, the native grape variety Ansonica is grown on granite rocks with a bottom layer of sand. The vines are planted only 50 meters from the sea and have an age ranging from 80 to 120 years.
The vinification room is equipped with traditional open vats and stainless steel tanks, in which spontaneous fermentation takes place. Graetz produces eight different wines. The two top wines Colore Rosso and Testamatta Rosso are fermented in open vats. The wines are then aged for a period of 30 months. The white wines are usually aged for 10 to 12 months in barriques.
The labels on the bottles reveal that Bibi Graetz comes from an artistic family, because he has painted the artwork on the labels himself. The wines have limited availability.The production of Testamatta, for example, consists of only 10,000 bottles per year. So you have to be quick to become the owner of such an amazing bottle.
