Jean-Marc Boillot
Domaine J.M. Boillot (as stated on the label), is an estate situated in Pommard in the Côte de Beaune region of Burgundy. Jean-Marc first worked together with his grandfather Henri Boillot and in the 1980’s he became the wine maker for Olivier Leflaive. In 1988 he started his own domaine after he inherited vines from his grandfather.
In 1991, he also inherited some exceptional vineyards from his maternal grandmother, who was the daughter of the well-known Etienne Sauzet. The domaine has 10.5 Ha of vines in the Côte de Beaune but produces also wines from the Maconais and Côte Chalonnaise. Both Pinot Noir and Chardonnay vines are planted and the total production averages 4200 cases annually.
The red wines are aged in 50% new oak barrels for around 16 months and the white wines are aged in 30% new oak barrels for around 11 months. All the wines are sampled before bottling to determine whether fining and/or filtration are required. Domaine Jean-Marc Boillot’s flagship wine is undouble the Batard-Montrachet Grand Cru (0.18 Ha), a wonderful and extremely well balanced white wine with minerality, concentration and length and with the potential to keep for many years.
Other important (Premier Cru) plots are found in Puligny-Montrachet (“Les Referts”, “Les Combettes”, “Champ Canet”,” La Truffière” etcetera), Volnay (“Le Ronceret”, “Carelle sous la Chapelle”) and Pommard (“Les Rugiens”, “Les Jarollières” and “Les Saucilles”). The brother of Jean-Marc, Henri, also runs a wine estate in Volnay named Domaine Henri Boillot.
