Crystalline and crunchy, the 2023 Paleo showcases a bright silver-yellow hue, blending Chardonnay and Sauvignon Blanc aged in barrique for 5 months. The nose is fresh and layered with quince and white grapefruit aromas, accompanied by vibrant lemon and lime oils, saline notes, sea breeze, and white flowers. Medium to full-bodied, it exhibits tremendous linear drive, with a balanced and energetic intensity that lingers across the palate. It is both lively and possesses great extract, allowing it to age gracefully over the next 8-10 years.
