The “Saint-Romain Sous le Château” 2023 by Vincent Girardin in the Côte de Beaune was produced in a typical stop-start season in the Côte de Beaune: cool and damp through late July and much of August, then heat at the end of August and a second, fiercer spell in early September that pushed sugars up fast and made picking a race. For whites the risk was low acidity and high alcohol, not the reverse, so where a wine kept its freshness, the credit goes to altitude and picking date rather than to the weather.
