Pierre-Yves Colin-Morey's Les Chenevottes 2018 is a white Premier Cru from Chassagne-Montrachet and belongs to Côte de Beaune. The vintage 2018 meant heat. From the middle of June through August, the Côte d'Or region was dry and hot, with maximum temperatures reaching around 40°C, and the harvest began unusually early, with the first grapes for white wine arriving from the 25th of August. Rain in August caused the grapes to swell, resulting in a bumper crop in Chardonnay. A bumper crop in a hot year can sometimes result in a flat wine. However, this wine is an exception. Through whole-cluster pressing, the use of native yeast, and aging with the lees for up to about 18 months without stirring, Les Chenevottes maintains a firm, structured flavor rather than a broad one. Fermentation that year was prolonged due to high potential alcohol content. The goal for Colin-Morey was to avoid extremes. The grapes were harvested neither too early nor too late, which would have imparted a fig-like aroma.

The 2018 vintage was racked in August 2019; some Premier Cru parts were transferred back to barrel, while the rest went into tanks, and bottling took place from late 2019 through 2020. It has not undergone any fining or filtration and is sealed with untreated extra-long corks and wax.
