White Burgundy from the Côte de Beaune region: A 2023 vintage Meursault, made from 100% Chardonnay grapes, produced by Patrick Javillier on an 11-hectare domaine. In 2023, some Meursault growers were ready to begin harvesting in the last days of August; this early harvest timing is a key factor in determining the wine's freshness.
Javillier's white wines are pressed using a pneumatic press, then fermented in oak barrels with natural yeasts, where it undergoes malolactic fermentation to soften the acidity. The aging process typically takes place in oak barrels for one year, followed by additional aging in tanks with the lees. This tank-aging phase enriches the texture without adding oak aromas.
With Meursault, expect citrus and nutty aromas rather than heavy oak notes. It's fine to drink now after letting it sit in a decanter for about an hour, but the flavors deepen with time. It's best enjoyed between 2025 and 2034.
