Bourgogne Passetoutgrain 2021 from Jean-Claude Ramonet is a red Burgundy blending Pinot Noir and Gamay, made in Chassagne-Montrachet in the Côte de Beaune. Passetoutgrain is the old Burgundian appellation that allows the two grapes together, and Ramonet builds it from younger Pinot Noir vines around Chassagne and Puligny plus a parcel of Gamay Noir averaging 30 years old. Twelve months in older oak barrels, so no new wood flavour, just slow air contact.

2021 was brutal in the Côte de Beaune. Frost nights on 6, 7 and 8 April dropped to -8°C, then rain until mid-July brought mildew and later some botrytis. Pinot Noir came in at about 30 to 35 percent of a normal crop. What survived gave lighter, perfumed reds with moderate acidity rather than austerity, and the Gamay fits that mould well. This is the estate's everyday red, not a cellar wine, and 2021 makes it fresher than most.
Serve around 16°C. Best enjoyed until 2030.
