Charlopin Parizot
Domaine Charlopin-Parizot can be found in the heart of Gevrey-Chambertin in Burgundy. In 1977, Philippe took over from his father and has been in charge of the estate ever since. At the time, only 3.5 hectares were in production. Today, the vineyard area has grown to some 25 hectares. These plantings are divided between the Côte de Nuits, Côte de Beaune and Chablis regions. Of all the appellations, Clos de Vougeot, Vosne Romanée, Chambertin and Chambolle-Musigny are the most important.
Philippe soon became known for his modern approach and sometimes abandoning traditions. For example, he chose to carry out fermentation in large stainless steel tanks instead of traditional oak barrels. Fermentation is initiated by using indigenous yeasts. Once the fermentation process is over, the wine is pumped over to French barriques where it matures for another 18 months. For the Grand Cru wines, all-new barrels are used. For village wines, the proportion of new wood is no more than 50%. Once wood maturation is complete, the wines are lightly filtered and bottled.
At first, not everyone agreed with Philippe's methods. These vinification methods deviated from the standard and would not focus on the expression of the terroir. But soon Philippe proved them wrong. Today, Philippe is considered a very talented winemaker and his wines are among the best in the region. Domaine Charlopin-Parizot's best vintages are: 2003, 2012, 2015 and 2019.
