The 2019 Chablis L’Humeur du Temps, blended from five parcels with different exposures and aged in used barrels, has a strict, linear bouquet, well-defined and quite focused, though maybe needing more time in bottle to develop terroir expression. The saline, spicy palate is well balanced with a fine bead of acidity. Lemongrass furnishes the finish and leaves the tongue tingling after the wine has exited. Very fine.

Produced from 5 plots this year, including Belair, which used to make a separate bottling along with Clardy. The 2019 Humeur du Temps displays a pale yellow colour, with generous fruit to the nose. Classical Chablis on the palate, with a really lovely mineral edge.
