Chiseled acidity provides firm definition for this chalky Champagne, though it's swathed on the palate by a creamy range of flavors, including passion fruit coulis, toasted almond, blood orange sorbet and lime blossom. A streak of salinity races on the finish.
Much more toasty than Les Prémices. There is an interesting tango on the palate between papaya fruit and a powerful oily spiciness, a bit like toasted papaya seeds and linseed oil. But the ripeness of the fruit through this wine is massive and all-encompassing and has the roiling substance of a storm. Olive oil and oranges. Quince and membrillo. Gripping and delicious, in an idiosyncratic way.
Medium yellow, silver reflections, fine, well persistent mousse. Fine nuances of herbs, baking notes and a touch of roasted pineapple, a mineral touch and some walnut. Complex and taut on the palate with fine white stone fruit nuances, a finesse-rich structure and salty-mineral character. Very long lasting, fine extracted fruit with a sweet touch in the finish.
