Razor-sharp acidity shows a fresh, citrusy tone to it and structures this sleek Champagne. Hints of brioche, honeysuckle, almond paste and spice flavor the wine, mixing on the refined texture. The lightly chalky finish is mouthwatering. Disgorged March 2010.
(60% chardonnay, 30% pinot noir and 10% pinot meunier) Bright gold. Exotic aromas of beeswax, botanical herbs, pear skin and nectarine, with a smoky, leesy undertone. Powerful, palate-staining orchard fruit and herb flavors show a pleasingly bitter quality and a sappy, honeyed note on the back half. A kiss of lemon zest adds lift and bite to the precise, long finish. I really like this wine's complexity and bet that it will be extremely flexible at the table.

The Aubry Ivoire et Ebene is a Champagne built on the contrast between the noble Chardonnay "Ivoire" (ivory) and the rustic Meunier "Ebène" (ebony), both varieties coming exclusively from the village of Jouy-lès-Reims.
