This open-knit Champagne is structured by lightly chalky acidity and offers subtle flavors of candied berry, pastry, ripe fig and apple. Ends with a fine-grained, minerally finish.
The 2004 Brut Premier Cru Aubry de Humbert is a fabulous Champagne, but it will require patience as it is tightly wound at this stage. Still the wine's focused, nuanced bouquet and finely chiseled fruit are a marvel to behold. Pears, apricots and flowers come together beautifully in this elegant, refined wine. As is typically the case, the Aubry house style is not an obvious, flashy one, but readers who take the time to appreciate this wine will be rewarded with an absolutely fabulous drinking experience. This is first-class juice. The Aubry de Humbert is a coeur-du-cuvée from the estate's oldest Pinot Noir, Pinot Meunier and Chardonnay vines, here blended in equal parts. A Champagne which has been named after Aubry de Humbert who was the archbishop who laid the first stone of the Cathedral of Reims on may 6, 1211. It is made of the "coeur de cuvée" the finest juice of the press. A blend of 60% Pinot Noir, 20% Meunier and 20% Chardonnay and is aged for at least five years on lees.
