Haute Couture is Frédéric Savart's Grand Cru Blanc de Blancs, made from 100% Chardonnay, and the 2021 vintage was produced from grapes harvested in a year when Champagne was likely to record its lowest yield in the past 40 years. Yields were low, and in accordance with local practices, all grapes were harvested by hand.
Savart is a third-generation grape grower who acquired this vineyard in 2005. He cultivates 4.5 hectares of vineyards according to organic principles and adheres strictly to organic methods, with the exception of a single treatment to control mildew.
The vins clairs (still wines) are fermented in oak barrels ranging from 350 to 600 liters in capacity, many of which are new oak barrels made by collaborating coopers such as Cavin, Tremeaux, and Atelier Centre France. All wines are aged sur lie for 10 months, and the vintage cuvées are aged with cork stoppers.
The vibrant and rich flavor profile features notes of orange peel, marzipan, and subtle hints of honey. A rich and smooth palate gives way to a somewhat short finish that leaves a dry and clean aftertaste. It is ready to drink now and pairs exceptionally well with food. It is best enjoyed by 2034.
