Le Creux d'Enfer is a Blanc de Noirs wine made from 100% Pinot Noir grapes grown in a single, west-facing vineyard (0.9 hectares) established in 1981. Cédric Bouchard has been producing wine since 2000 and focuses on single-parcel, single-varietal, single-vintage Champagne wines rather than blended cuvées.
The year 2021 saw persistently cool weather across the Champagne region, and the area faced the risk of recording its lowest harvest in 40 years. This is a small quantity of wine produced from a small vineyard. As in other parts of Champagne, the harvest is done entirely by hand.
It's enjoyable now, but it will offer even greater pleasure with age. It's best enjoyed between 2028 and 2048. Serve in a white wine glass rather than a flute. This allows the aromas to fully unfold without the need for decanting.
