Cédric Bouchard’s “La Haute-Lemble” wine is made from grapes grown on a single plot in the Côte des Bar, in the southern part of Champagne, where Pinot Noir is the dominant variety. The 2021 vintage has one interesting feature: it is a “Blanc de Blancs” made not from Chardonnay, but from Pinot Noir and Pinot Meunier that underwent white pressing. One vineyard, one harvest, no dosage, no filtration. This is exactly how Bouchard operates, and the 2021 vintage embodies the essence of this house in its characteristically extremely dry and pure style.
