Tasting Note Cuvée Aure NV

The wine offers aromas of lemon zest and green apple, followed by a subtle hint of chalk dust. The bubbles are delicate, the acidity is high and linear, and the finish leans toward a salty note rather than fruitiness. Cuvée Aure NV is excellent as an aperitif, but thanks to the wine's distinctive body, it also pairs well with food.

Grape Varieties

Cuvée Aure NV is composed of two varieties:
On chalky soil, this blend delivers both sharpness and body.

• Chardonnay: Offers citrus aromas, the characteristic tension of chalky soil, and a long finish
• Pinot Noir: Offers body and middle notes of red fruit

Cellaring Potential

Cuvée Aure NV is a pleasure to drink. The acidity derived from the chalky soil keeps the wine firm. Serve at approximately 10°C. Decanting is not necessary.

About Aurore Casanova

Aurore Casanova spent seven years as a ballerina before pruning vines convinced her to change careers, and in 2011 she left the Zurich Opera House for her mother's plots in the Montagne de Reims, planted back in 1968. She studied viticulture and oenology in Avize, met Jean-Baptiste Robinet there, and together they set up in a historic farmhouse in Mardeuil, just west of Epernay. First vintage: 2016. Aurore Casanova farms 3.8 hectares, certified organic and run on biodynamic principles, with chickens sent out to hunt caterpillars and willows planted for shade. Production sits around 15,000 bottles a year. Grand Cru Pinot Noir comes from Puisieulx, Meunier from Champvoisy, and 19 Chardonnay plots in Mesnil sur Oger include vines from 1928 and 1929. Ageing happens in old barrels sourced from Selosse, Egly-Ouriet and Tarlant.

Terroir & Climate

The chalky soil beneath the thin topsoil drains quickly and releases the heat accumulated during the day at night, helping to maintain high acidity. Aurore Casanova's 3.8-hectare estate includes Grand Cru vineyards in Puisieulx and Le Mesnil-sur-Oger.

Winemaking

The winemaking process here is intentionally based on the principle of minimal intervention. Thanks to this restraint, the mineral notes are distinctly pronounced.
