The 2021 growing season in the Napa Valley was marked by drought. Yields were low, fruit was small, and skins were thick. For Shafer's Hillside Select, that meant a concentration of volcanic slope fruit in the Stags Leap area. And unlike the 2020, there was no smoke flavor to worry about. With serious depth and structure, the 2021 is considered one of the outstanding vintages of Cabernet in Napa this decade.
All Cabernet Sauvignon from specific hillside blocks on the estate, Shafer's 2021 Cabernet Sauvignon Hillside Select spent 28 months in 100% new French oak. It's a big, ripe wine, weighing in at 15.5% alcohol, but it remains harmonious from front to back. Deep, intense aromas of black cherries and cassis are accented by dried spices on the nose, while the full-bodied palate is rich and textural, showing tremendous intensity and length on the finish. Based on how previous examples have aged, this vintage should drink well through 2050.
Incredibly ripe, delicious and structured, this age-worthy, collectible wine puts a lot of power in a velvety, refined package. Deep, concentrated black cherries, blackberries, dried blueberries, espresso and creme de cassis are wrapped in a full body and fine-grained, supple tannins strong enough to call for further aging of at least a few years.
The 2021 Cabernet Sauvignon Hillside Select is insanely beautiful. It's also one of the very finest wines I have ever tasted here. Bright, pliant and resonant, the 2021 offers a beguiling mix of Cabernet Sauvignon aromatics, generous fruit and gentle structure. The stylistic shift at Shafer has been remarkable—the 2021 is a great example. Red-toned fruit, blood orange, menthol, pine and sweet spice build into the eternal finish.
As always, the 2021 Cabernet Sauvignon Hillside Select is 100% Cabernet Sauvignon that will spend 28 months in new barrels. Its deep purple hue gives way to a behemoth of a wine that has incredible cassis, black raspberry, and even blue fruits to go with loads of camphor, minty herbs, graphite, and darker chocolate. It's full-bodied, concentrated, yet pure, flawlessly balanced, and has a great finish.
Aged 32 months in 100% new French oak. It is quintessentially Stags Leap, with grapes grown on Shafer's famous Hillside estate vineyard, roughly 25ha, with very shallow volcanic tufa soils. It's a barrel selection of the very best blocks. A total of 2,900 cases were produced. Such a beautifully balanced wine with tremendous staying power and expressive Stags Leap ironstone minerality with heady sagebrush and conifer notes with white pepper and walnut husk. The wine has an impressive depth of red-toned fruit on the mid-palate framed by tannins that practically dance across the palate, exuding length, tension, and power. Huckleberry and black cherry fruits, black truffle, dried violets, graphite, and salted dark chocolate are all framed by racy acidity, which keeps everything fresh and lifted. The 2021 releases mark Elias Fernandez's 38th vintage as Shafer's winemaker. He was hired by John Shafer in 1984, two weeks out of UC Davis.
Profound and full-bodied with an intensity of aromas and flavors, this sophisticated and ample Cabernet Sauvignon has become one of the region's icons. Made from the Shafer's hillside vineyards, this red carries a core of dark fruits, crushed rocks, and savory elements of mushroom followed aromas of aromatic forest. Abundant, fine tannins and a lengthy finish mean the wine will continue to develop with age, but will also benefit from another several years in bottle. Enjoy with prime rib or another cut of succulent meat. Enjoy.
Aromas of black currant, blackberry liqueur, crushed graphite and new cedar make the 2021 Hillside Select dense but not heavy. On the palate, the tannins are fine and tightly woven, with a graininess that seems to come from small berries grown in the drought. Mocha and dark cocoa are embedded in the finish, which is long and subtly flavored. Powerful. But calm. Decant if opened while the wine is young.
Hillside Select is made from a single grape variety:
100% Cabernet Sauvignon grown on rocky hillsides.
Why not use a blending partner? In the Stags Leap area, volcanic soils and warm days bring Cabernet to perfection, so Merlot and Cabernet Franc are not needed. The fruit is delivered in perfect condition. That's the claim of the Napa hills, and Shafer sticks to it.
Drink between 2028 and 2050; the 2021 has a tannin backbone, acidity and concentration that can be enjoyed for a long time. It should be aged for at least five years before opening, and longer if possible; store at 12-14°C. Over time, notes of blackcurrant are replaced by notes of tobacco, leather and dried herbs.
Shafer is one of those Napa wineries where the winemaker actually runs the business. John Shafer left a career in Chicago publishing in 1972 to plant cabernet on an overgrown hillside and establish a winery there. His son Doug Shafer took over as president, and Elias Fernandez has been winemaker since 1984. In early 2022, Shafer was sold to Shafer Vineyards' new ownership, but Doug and Elias stayed on. We believe it is because of this continuity that Hillside Select continues to be recognized.
Hillside Select vineyards are located on rocky volcanic soils in the eastern part of the Stags Leap AVA in Napa Valley. Why it's important. Volcanic rocks drain quickly and store little water, so the vineyards have to put down deep roots and feed on what they can get their hands on. The result is small berries and thick skins. Add to that south and southwest exposure, steep terraces, and evening winds blowing from San Pablo Bay through the Chase Cellars gap, and you have land made for structured Cabernet.
About 32 months in 100% French barriques (225-liter new barrels from Bordeaux). By any standard, that's a long élevage. However, the fruit from this volcanic site has the concentration to absorb it without turning to sawdust. Harvested by hand, the fruit is sorted using an optical sorting machine, and each small plot is fermented separately before blending. Since 2004, the farm has been solar-powered.
The tannins here need fat and protein. Try:
Decant for at least two hours, especially 2022; serve at 17-18°C.
