Tasting Note Aristargos 2024

The initial impression is of quince and white peach, followed by notes of beeswax and almonds, characteristics commonly found in Marsanne and Roussanne. Lime zest sharpens the edges of the flavor. Texture plays a central role on the palate: richness from the lees (yeast sediment left over from the aging process), subtle phenolic astringency from skin contact, and acidity that cuts through the center. It is very dry and savory. The Aristargos 2024 is excellent to drink now, and its solid framework of acidity will further enhance the wine's aging potential.

Grape Varieties

Chenin Blanc takes the lead, supplying acidity and the saline cut. Roussanne and Marsanne add body and a waxy texture, while Grenache Blanc contributes the tartness of green apples and Semillon adds soft citrus notes in the mid-palate.

Cellaring Potential

The firm acidity and robust phenolic structure give the Aristargos 2024 room to develop. It is best enjoyed through 2038. Serve at 10-12°C in a large wine glass rather than a decanter.

“David & Nadia” is a small winery located in Swartland. Its philosophy is rooted in old vines, granite, and an unwavering belief that “South African wines reveal their best qualities when they are fresh, dry, and unpretentious.” Husband and wife David and Nadia Sadie jointly manage viticulture and winemaking at the “Paardebosch” farm in Paardeberg, producing wines from Chenin Blanc, Grenache, as well as several blends that are gradually becoming the benchmark for this region.

Terroir & Climate

Granite is the key here. Paardebosch is located in Paardeberg, at the southern tip of Swartland, on granitic soil that David reads as salinity and restraint rather than tropical fruit. Although the Swartland region is hot and dry, cool Atlantic breezes reach the slopes of Paardeberg, and the drought-resistant bush vines planted in loose soil produce smaller, more concentrated berries. The dry air reduces the risk of mold growth. This combination is the secret behind Aristargos's mineral notes and its finish with a subtle hint of saltiness.

Winemaking

Natural yeast, no sugar adjustment, no new oak barrels. In the case of Aristargos, David & Nadia split the wine between concrete vats and older large-format French barrels, so its texture comes from the sediment rather than the wood.

Food Pairing

Salinity and a dry, full texture make, Aristargos pairs exceptionally well with fish dishes. Recommended pairings:
Avoid very spicy dishes. There is no residual sugar to temper the heat of the chili.
