Tasting Note

Aromas of elderflower and grapefruit zest come to the forefront, while nuances reminiscent of flint—like a freshly lit match—lie hidden in the background. The mid-palate reveals notes of white peach and a barely perceptible hint of yellow melon, though this is not a wine in which tropical fruit aromas literally explode. The wine has a full-bodied palate, with pronounced acidity, a saltiness reminiscent of porphyry soil, and a stony texture. The finish is long and dry. The wine can be enjoyed immediately after opening the bottle, but if you let it rest in the bottle for 1–2 years, the aroma will become more balanced. Serve chilled. However, do not chill it excessively.

Grape Varieties

Sauvignon Blanc is a single-varietal wine, with no blends. In the high-altitude regions of Terlano, this variety loses both the distinct herbal aroma characteristic of the Loire region and the unrestrained brightness reminiscent of Marlborough. Instead, notes of elderberry, white peach, grapefruit peel, and a mineral sharpness come through. Cool nights preserve the acidity, while sunny days promote fruit ripening. It is precisely this combination that accounts for the success of the single-varietal Sauvignon Blanc in these conditions, without the need to blend it with Semillon to add body.

Cellaring Potential

Best enjoyed from now through 2034. Acidity is the driving force behind this wine, and “Sauvignon Quarz” has a proven ability to age well for over 10 years. When young, the aroma is dominated by notes of citrus and elderflower, but after about 5 years, some of that initial freshness transforms into honeyed, waxy, and even slightly smoky nuances. Store at a temperature of 10–14 °C.

The Producer

Cantina Terlano ages its whites like reds, and the Rarity bottling only leaves the cellar after at least ten years on the fine lees. That patience defines the place. A cooperative in the village of Terlano, halfway between Merano and Bolzano, it has 143 member growers farming roughly 190 hectares on the red volcanic porphyry slopes of Monte Tschöggelberg. Born of Fire is the slogan, and it fits. Whites account for 70% of production, with Pinot Blanc as the historic flagship in the Terlanner blend. Reds, led by the local Lagrein, make up the rest. Head winemaker Rudi Kofler oversees around 1.5 million bottles a year, all DOC-certified. The 2009 cellar renovation added 18,000 m3 of storage, built specifically so wines could age undisturbed. Space and patience, in that order.

Terroir & Climate

The soils in the Terlano area rest on Bolzano quartz porphyry. This red volcanic bedrock is the very source of inspiration for the winery’s “Quarz” (Quartz) label. Overlying this are deposits of silt and gravel carried by the Petersbach River; water drains quickly, and the soil warms up rapidly. This vineyard stretches across the slope of Monte Tschöggelberg, forming south-facing terraces. At night, cold air flows down from the Alps, and during the day, warm air of Mediterranean origin rises from the valley. It is precisely this temperature difference between day and night that allows the Sauvignon Blanc to retain its high acidity and gives it a balanced, rather than overly intense, aroma.

Winemaking

“Sauvignon Quarz” is part of the “Selection” line, which signifies a meticulous and lengthy winemaking process. Kofler carries out fermentation and aging by combining the use of stainless steel tanks and large oak barrels, and before bottling, the wine is aged for a long time in contact with fine lees. It is precisely this period of contact with the lees that gives the wine its texture—a slightly creamy body that lies beneath the sharp citrus flavor. New barrels are not used, so the aroma is completely free of notes of vanilla and toasted bread. The key is for the porphyry terroir and Sauvignon variety to take center stage, with the oak serving, at best, merely as a backdrop.

Food Pairing

The acidity and richness of stone fruits give this wine its breadth of flavor. Here are a few suitable pairings:

• White asparagus with brown butter (a classic South Tyrolean spring dish)
• Fresh goat cheese on toasted bread. The citrusy acidity cuts through the richness
• Pan-seared trout with lemon and herbs
• Schlutzkrapfen (ravioli with ricotta and spinach) with sage butter

It also pairs well with sushi and ceviche. Serve at 10–12 °C. If the wine is chilled too much, the elderflower aroma will disappear.
