Cervaro della Sala 2024 is Antinori's white Umbria IGT, produced primarily from the Chardonnay variety at Castello della Sala, located on the hills of Ficulle, which lies on the Umbria-Tuscany border. Harvesting takes place at night, ensuring that the fruit's aromatic compounds are fully preserved until it is transported to the winery. Chardonnay undergoes cold skin maceration followed by fermentation in French oak barrels; it is then aged for several months on its lees through the process of bâtonnage (stirring the lees back into the wine). Grechetto, on the other hand, is fermented in stainless steel tanks to maintain its freshness. Blending takes place at the final stage.

For a white wine fermented in oak barrels, it has a relatively low alcohol content of approximately 12.5-13%, with an acidity close to 5.85 g/l and residual sugar of just 0.8 g/l. In other words, it is dry and crisp. Due to the marine fossils present in the clay-limestone soil, a salty, vertical note is discernible, not beneath the oak aromas, but cutting right through them.

Cervaro has been produced in this manner since Renzo Cotarella released its first vintage in 1985. This wine is one of the first Italian white wines to undergo malolactic fermentation and barrique aging. Serve at 10-12 °C. Best enjoyed between 2024 and 2035.
