The 2014 Chablis Grand Cru les Preuses, also due to be bottled after the 2016 harvest, has a tightly wound bouquet with dandelion, cold limestone and dew-speckled apples unfurling with each swirl of the glass. The palate is fresh and vibrant with a twist of bitter lemon on the entry, very tensile and spicy, engaging with the sense and delivering some gorgeous spicy notes on the long and sustained finish. This is just a superb Chablis from Sebastien Dauvissat that seems to be repaying its extended maturation.
