The sample I tasted of the 2018 Les Graviers Chardonnay was still unbottled after five years in barrel. He has five barrels of this, a less reductive wine and therefore the result of a long élevage. It is more oxidative and more open and evolved, and it's probably reaching the limit of aging in barrel, which is different for each terroir. This is close to being over the limit. He doesn't know what he's going to do with this wine yet...
