Chablis La Forest 2019 is a white wine and Premier Cru produced by Domaine Vincent Dauvissat; it is made from grapes grown in a vineyard at Chablis that is commonly referred to as Forêt.
The 2019 vintage was drier, hotter, and had significantly more sunshine than what Chablis winemakers typically refer to as normal. Before being hit by two heat waves, the year began with a prolonged cold snap. Nevertheless, the winemakers harvested the grapes at an appropriate level of ripeness. Most wineries reported alcohol levels below 13 degrees, while some recorded levels of 13.5 degrees or higher. Yields were low, particularly notable in Premier and Grand Cru, resulting in lower wine production than in 2018. Chablis Commission of BIVB described this harvest as high-quality.
When poured, it offers a sense of concentration without heaviness. La Forest rarely stands out as the most distinctive wine in the Dauvissat series, but it often proves to be the most typical. It is rich, with mineral nuances, and remains somewhat closed when young. In 2019, the fruit ripened better than usual, and while the wine opens up quickly, it does not lose the mineral backbone of this Chablis Premier Cru.
