Vaillons is a Premier Cru, located on the left bank of the Serein River; here, Domaine Raveneau transforms into Chablis, which has the richest floral aroma, and the 2023 vintage is a white Burgundy that clearly showcases these characteristics. It is a small vineyard where vines were planted about 30 years ago in stony, marly limestone soil. Harvesting is done by hand, a practice almost no one in the Chablis region follows anymore, and fermentation occurs naturally without the use of new oak barrels. This last point is crucial, as the Chablis Vaillons 2023 is built on notes of citrus, white flowers, and a chalky texture rather than oak aromas.

The 2023 growing season in Chablis was warm. Flowering went smoothly, resulting in a very high yield, and the hot, dry weather in early September increased sugar levels while lowering acidity. Growers who harvested early were able to preserve the wine's freshness well. Raveneau has long preferred early harvests over late ones, an approach that works particularly well in a year like this one.

The result is a wine that is approachable from its youth yet possesses sufficient body and a solid structure to age for over 10 years.  It is best enjoyed through 2044.
