Nicolas Jacob’s career started while working on several organic vegetable farms. It took some time before his interest in wine started growing. On his quest for more knowledge and experience, he collaborated with some renowned winemakers. For example, he worked with Jean-François, known from Domaine Ganevat, and he also spent some time at Domaine Macle with winemaker Laurent Macle.
After a few years, he decided to buy his own plots. In 2015, he became the owner of one hectare in the village of L'Etoile in the Jura, where pinot noir, chardonnay and the local variety savagnin were planted. Four years later, he managed to acquire a small winery in Cesancey and another five hectares in Rotalier.
Of course, Nicolas uses his previous work experience as a basis for his work in the cellar and in the vineyard and he does everything according to organic methods. As a rule, everything runs as naturally as possible. The fermentation is started by yeasts that are naturally present. The wines are aged in used barrels, to keep the influence of the oak to a minimum. Moreover, only minimal amounts of sulphite are used. The result? Beautiful, clean and pure wines. These wines come out under the names Les Argales, La Haut, Aux Perrieres, Les Chazaux, Au Mouiller and 'X'. Each of these wines are special in their own right, and each has a unique character.
Even though Nicolas has only been producing his own wines for just five years, he is certainly one of the bigger players and he belongs to those unique winemakers of the Jura. His best vintage by far to date is the vintage 2019.
