The second and final whisky in this diptych is a sixteen-year-old single malt, aged on an oloroso sherry puncheon. The whisky is bottled at a cask strength of 58.7%. A total yield of 699 bottles with a deep mahogany color have been bottled from the cask. This dark color has been accomplished solely by naturally by maturing naturally in the Olorosso sherry cask.
Quality and taste
Walker took over the distillery exactly five years ago together with Graham Stevenson and Trisha Savage.
The trio bought the distillery from beverage conglomerate Pernod Ricard. Before the acquisition, the malt whisky from The GlenAllachie was mainly used for the blended whisky. After this purchase, a number of drastic changes were made in almost all steps of the production process as the GlenAllachie single malt whisky is to them the most important product.
One of the changes Billy Walker has made is an exceptional barrel management. All casks obtained and purchased casks are of high quality only and only the very best casks are used to give the whisky the right quality of maturation. You can taste all of that in the whisky such as this single cask bottling.
Tasting Notes:
Nose: Notes of dried apricot, cinnamon and heather honey. Through it come gusts of coffee, dried flowers and ginger.
Palate: Layers of dried apples and pears, fig syrup and honey.
Finish: Walnuts, cinnamon and syrup.
