In southwestern Switzerland lies the region of Valais, home to the Aries Wines estate. Aries Wines is led by Paul Boeuf, who grew up in one of the world’s most renowned wine regions: Beaune. He moved to Switzerland to produce exceptional biodynamic wines. In 2020, he founded Aries Wines. Prior to this, Paul had already built an impressive resume working with several prestigious wineries and winemakers.

Paul Boeuf earned a master’s degree from the University of Lille, where he studied Agriculture, Agronomy, Environment, and Sustainable Development, specializing in viticulture. During his studies, he worked in the cellars of Louis Jadot, assisting winemakers. For his graduation internship, he served as a quality manager at Boisset la Famille des Grands Vins (a group that owns many estates among others: Domaine de La Vougeraie, Jean-Claude Boisset, Louis Bouillot, Bouchard Aîné & Fils, and Mommessin). During this time, he realized that he preferred working in vineyards and cellars over an office setting, deciding to pursue this path further.

He joined the renowned winery Maison Joseph Drouhin, where he became a team leader for the winemaking team. Maison Joseph Drouhin started practicing biodynamic viticulture as early as 1988 and was one of the first major wineries to adopt this approach on a large scale. Here, Paul gained extensive knowledge of biodynamic viticulture and learned more about winemaking in the cellars. The Drouhin family also owns Domaine Drouhin a winery in Oregon, USA, where Paul worked a season in the cellar, further expanding his knowledge of winemaking on another continent.

After three years at Drouhin, he had the opportunity to work at the legendary Domaine Roulot in Meursault. Owner and winemaker Jean-Marc Roulot is known for his organic and biodynamic farming methods, minimal interventions, and use of natural yeasts in the cellar. The estate features relatively small plots, allowing for meticulous attention to detail. Year after year, Jean-Marc produces terroir-driven wines of exceptionally high quality. Paul expanded his expertise in biodynamic viticulture here and gained further insight into expressing terroir in wines. He also worked a season at Chacra, another Roulot winery in Argentina. This winery, located on the other side of the world, features a unique terroir, further enriching his experience with diverse winemaking environments.

Paul enjoys spending time outdoors in his free time. He loves mountaineering, skiing, and surfing. During the 2016 winter season, he worked as a ski instructor in Verbier, located in the Swiss region of Valais. The following year, he returned for another winter season and encountered the wines of Jean René Germanier, one of Switzerland’s largest producers with 25 hectares of vineyards fully certified organic under the BIOSUISSE label. He started working there as Maître de Chai before deciding to launch his own project, Aries Wines, in 2020.

The grapes used by Aries Wines come from the finest plots of Jean René Germanier. Paul applies all the knowledge of biodynamic viticulture he has acquired globally over the years. The vineyards are situated in the mountains, on small terraces and steep slopes at altitudes exceeding 400 meters. With meticulous attention to detail, he treats each plot and wine individually to produce unique terroir wines. His Pinot Noir and Chardonnay clearly reflect the style shaped during his years in Burgundy. Meanwhile, his other cuvées, featuring grapes like Gamay, Arvine, and Syrah, express a truly unique representation of the Valais terroirs. All his cuvées are balanced and complex wines that undoubtedly rank among the finest in the Alps.
