The Rosebank 31 Years Release Two (and Rosebank in general) represents an ideal of what traditional Lowland whisky is.
Nose
Elegance personified, the floral sweetness of this Rosebank stands out. It's grassy, orange-y and caramel-y at the same time, and the oak is certainly noticeable, despite the use of only refill casks. Plenty of (orchard) fruits too – green apple, a subtle hint of mango and nectarine.
Taste
Spot on. A creamy mouthfeel with sweet and fruity touches. It's honeyed with hints of grilled pineapple, mangoes and apricots. Even some liquorice there at the end. Slightly herbacious too, maybe even some resin and certainly some gentle baking spices.
Finish
Medium in length. Lingering orange peel and gentle oak spices. Finally some pear and crushed mint.

Since the Rosebank distillery closed in 1993, the second official bottling of the Lowland distillery with an almost mythical reputation has been released. A few casks remain from this illustrious distillery that closed its doors in the 1990s. The whisky distilled before its closing has rested and matured in oak casks for over three decades.
The Rosebank 31 Years Old Lowland Single Malt alsocontains whisky from these unique remaining casks. Despite its age, the whisky still has lively citrus tones and the fresh notes of lime and lemongrass.
The light and lively nose of the whisky flows seamlessly into the flavor profile, where it is complimented by mint and chamomile. This is complemented by the darker and fuller tones of leather and banana bread. Finally, the whiskey ends with a beautiful long spicy finish in which peach and a hint of oak can be found.
Malcolm Rennie, Rosebank Distillery Manager, said: "This is the first Rosebank release since I took over as Distillery Manager and the importance of this launch is huge. This spirit was distilled before the distillery closed in the last century and has been maturing ever since. Aged in barrels, waiting to be bottled by us now.”

It is Rosebank's second global launch since its purchase by Ian Macleod Distillers. This family business is the driving force behind the reopening of the Falkirk Distillery.
Tasting Notes:
Color: Light amber.
Nose: Full of citrus, lime, lemongrass and coriander seed, cloves with soft vanilla and sugared almonds.
Taste: Fantastic aged whisky, while still light and lively, with mint, chamomile with leather, berry and banana bread.
Finish: Sweet with hints of peach, oak and long spice notes
