A descendant of the well-known Boillot family, Louis previously worked with his father and brother at Domaine Lucien Boillot in Gevrey-Chambertin. In 2000, Louis Boillot decided to start for himself.
Lucien Boillot's estate was eventually split up, part of which went to Louis. He also works with some vineyards inherited from his grandfather at Domaine Henri Boillot. He released his first vintage in 2003.
He produced the first vintages in Gevrey-Chambertin, but in recent years production has taken place in his partner Ghislaine Barthod's cellar in Chambolle-Musigny. With both working as winemakers, it is also almost inevitable that their son would choose to follow the same path. Clément therefore helps with vineyard maintenance and vinification.
The estate has almost 7 hectares in both Côte de Beaune and Côte de Nuits. A vineyard in the north of Moulin-à-Vent will be added in 2013. Louis is very driven, passionate and he always strives for the highest achievable quality. This is why he chooses not to use pesticides and deliberately keeps yields low. The portfolio includes several premier cru and village wines, including Volnay 1er Cru Les Angles, Nuits St. Georges Les Pruliers and Beaune Les Epenotes. Once fermentation is complete, the wines are aged in wood for 15 to 18 months. The barrels consist of up to 30% new French oak. This ensures that the wines are harmonious and elegant. Together with his wife, Louis produces magnificent wines! 2019 and 2020 are considered Domaine Louis Boillot's two best vintages.
