For this release, Master Blender Billy Walker has used rums with high, medium and low ester levels, which have a lot of influence on the taste. Initially, the rum went on a mix of American and French oak barrels with an alcohol percentage of 86%. After aging for 30 months, all the rum has been reduced to an alcohol content of 69% and the rum is put in a similar blend of barrels to complete its aging journey. Using his half-century of experience, Billy then expertly blended the rum to create a complex, rich and deliciously fruity rum.
The double maturation, at relatively low temperatures, makes it possible to age the rum at two different strengths in the oak barrels. This gives the rum a full and juicy spectrum of flavors.
This bottling uses barrels previously used for maturing red wine and rye whiskey, as well as new oak barrels.
Tasting Notes
Nose: Packed with tropical fruit, vanilla, apples and pears, syrup, strawberry coulis and butterscotch.
Palate: Layers of honey, pineapple and plantains, with dried banana chips, grapefruit and cinnamon.
Finish: From round and juicy to slightly spicy.
