Disgorged in October 2015 with a dosage of 6.7 grams per liter, the 1999 Millésime Brut Légende (a.k.a. Hugh de Payen) offers a deep, ripe, concentrated and intense bouquet of caramel, quinces, dried fruits and floral aromas. Salty, pure and well structured, this is a pretty rich and complex but still pure and fine cuvée based on 50/50 Pinot Noir and Chardonnay
