Quince. Pickled quince, dried apricots, lime pickle. A mosaic of intricate flavours and textures. Boldly bitter, but intense sweetness comes from the dried-apricot notes and there is grainy savouriness to balance. Scintillating acidity packed tight into the folds. Throbbing with energy. Gorgeous.
