Daftmill—a farm-to-bottle distillery nestled in the heart of Scotland—is one of the smallest in the country, with an annual output of just 20,000 liters. Known for their meticulous approach, the Cuthbert brothers spare no detail in their releases. This latest Winter bottling is crafted from Publican barley, harvested on August 28th and 29th, 2009. After harvesting, the barley was carefully dried on the farm until the summer of 2010 and then malted at nearby Alloa. The whisky itself is a blend of 27 first-fill ex-bourbon casks filled in December 2011, with bottling completed in late 2024. This batch produced a total of 7,500 bottles at a robust 46% ABV.
**Tasting Notes:** A symphony of honey, grain, citrus, and apple meets the nose first. Then, a gentle wave of nuts and vanilla comes forward. This Daftmill stands out with more pronounced grain notes than earlier releases, surprising me with the late arrival of nutty tones on the palate. It's evident, once again, that Francis has outdone himself.
