Sous-Roche is the lieu-dit underneath the big rock of Château Chalon, the best known and most prestigious of the appellations on classical Chalon, and has gray marl soils, the source for the 2019 Savagnin Cuvée du Professeur. This is superb, in the style (and quality ) of Marnes Bleues from Ganevat. It's more compact and austere but with incredible depth and energy, a medium body and moderate ripeness and alcohol (12.5%) after aging for three years in barrel. It has notes of citrus, salted caramel, some puff pastry and a seamless palate with lots of depth, energy and light. This is one of the great Savagnin ouillé wines from Jura. 3,000 bottles produced. He's keeping the equivalent of 2,000 bottles of this wine to continue aging the wine (ouillé), hopefully for eight to 10 years. I asked if I could put an order for that already... I loved this wine.
