The 2019 Chablis Clardy et Rosette, aged in foudres, is very neutral on the nose and, a little like the L’Humeur de Temps, leaves me seeking more personality. The palate is well balanced with a tang of quince and clementine on the entry, then vibrant and tensile, leading into a citric finish. There is attractive spiciness here as well as good persistence. Just give it a year for those aromatics to develop.
This is now resting in tank having been fermented in two foudres. Light pale lemon in colour, boasting a clear oyster shell bouquet, with really beautiful energy behind. This is a magnificent bottle of Chablis in the making. Absolute precision. Even the usually discreet Olivier cannot hide the huge smile on his face when he served this wine. This is the first year that they have made a blend of these two vineyards and Olivier things that the extra hang time made possible by the cold, soils in Rosette may have been a factor.
