At the turn of the 20th century, the owner of the Poisson estate, on the island of Marie-Galante, decided to purchase a copper Collumn-Still. In tribute to the pioneer of rum distilling on the island, Father Labat, the rum made by Poisson Distillery bears his name “Pere Labat”. The rum is still traditionally made from fresh, hand-harvested cane sugar.
Pere Labat Rhum Hors d’Age Millesime 2004 Single Cask is a vintage rum that has matured for 13 years in oak barrels that are stored in a warehouse in the middle of the forest next to the distillery. This maturation provides a rich aromatic rum.

Smell: Harmonious convergence of dried fruit and honey
Taste: Warm and spicy, notes of dry fruit and soft cinnamon
Finish: Long and generous with hints of pepper
